Walnut Oil Pressing: Tips for Maximum Yield

Walnut oil is one of the highest-value edible oils on the market, but walnuts are also one of the hardest seeds to press well. Here is what we have learned from working with walnut oil producers.

Moisture matters more than most people think. Walnut meat with 5-8% moisture gives the best oil yield. Too dry and the powder flies out during pressing; too wet and the oil emulsifies and becomes cloudy. Many producers dry the walnuts gently before pressing.

Pressure is the second key. Walnuts need at least 30 MPa of cake pressure to release their oil fully. That is why we recommend the HN365 or above for walnut — the 300-ton entry models do not have enough force for consistent results.

Cold pressing is almost always preferred for walnut oil. The delicate nutty flavor and the healthy omega-3 fatty acids are heat-sensitive. Hot pressing gives more oil but the flavor changes and the oil darkens. Most premium walnut oil buyers specifically ask for cold-pressed.

One last tip: do not over-press. Once the oil flow slows to a drip, holding pressure longer does not extract much more oil but can push fine particles through the filter. A good operator knows when to release.
